INGREDIENTS

For the pasta reale

2 eggs
salt to taste
black pepper to taste
nutmeg to taste
50 g flour
3 tablespoons chopped herbs (parsley and chives)

To serve

1 litre water
2 tablespoons Bauer Meat Dadocrema
chopped chives to taste

Preparation

To make herb pasta reale in broth, pre-heat a conventional oven to 180 °C and line an oven dish of approx. 20 x 25 cm with baking paper.
Separate the yolks from the whites and beat the latter with the salt until stiff. Then add the black pepper, the nutmeg to taste, the egg yolks, the flour and the chopped herbs. Delicately combine everything with a spatula, folding from the bottom over the top.
Transfer the mixture to the oven dish and distribute evenly. Cook at 180 °C for 7-8 minutes until golden.
Remove from the oven and cut into cubes of approx. 1.5 cm.

In the meantime boil the water and add the Bauer Meat Dadocrema. Stir, simmer for a couple of minutes and serve the boiling broth with the squares of herb pasta reale and, for those that like it, some chopped chives.
