INGREDIENTS

400 gr of stale bread cut into cubes
1 fresh sausage
100 gr speck cut into cubes
2 eggs
2 glasses of milk
parsley
200 gr bread crumbs
100 gr Trentingrana cheese (grana cheese produced in the Italian Trentino Alto Adige region)
pepper
3 liters of meat broth obtained with Bauer Extra Virgin Olive Oil Beef stock cubes

Preparation

Soak the bread in the milk and mix well. Add the eggs, the sausage, the speck, the parmesan cheese, the pepper and the finely chopped parsley.
Mix well using your hands and let it rest, covered, for about half an hour.
Add the bread crumbs until you obtain the right consistency.
With wet hands, take a small piece of dough and form the canederli, if possible make them all of about the same size.
Cook the canederli in the boiling meat broth for about 20 minutes.
Serve with the broth.
